Eggless Banana Cake

Raaya and I made this cake out of desperation. We had dying bananas lying on our kitchen counter. We had no eggs. So we decided to finally make an eggless cake. It only took a pandemic though. Every store in town has run out of eggs and flour right now. With the lockdown, everyone's home and cooking so the chickens can't keep up with the demand. It's okay though because we loved the eggless version so much that dare I say we might never put an egg in banana cake ever again. I have so much to talk about Covid 19 because boy have things changed in past two weeks. But I am gonna hold my thoughts and head straight to the recipe. Just gonna add here - This is a 100 percent foolproof recipe. The cake was gone within minutes!!

Ingredients -

  1. all purpose flour (180 gms)
    melted butter (60 gms)
    sugar (60 gms)
    baking powder (1 teaspoon)
3 overripe bananas (mashed with a fork)
    milk (90 ml)

  2. Steps -

1. Mix the dry ingredients in a bowl (flour, sugar, baking powder). Preheat the oven at 180 degrees C.
2. Mix the wet ingredients (butter, mashed bananas, milk) in a separate bowl.
3. Add the dry ingredients to the wet mixture, and mix it. Pour the batter in a lined cake tin.
4. Mix till there are no lumps.
5. Put it in the oven, and let it bake for 50 minutes.

6.
Take it out. Transfer it to a cooling rack, and let it cool.
